Canvas Loves…. Italian food

One of the first things that springs to mind when thinking of spending time in Italy is the delicious food that the country is famous for…pizza, pasta, cannoli…the list goes on. A favourite Italian dessert has to be tiramisu. The flavours all combined together are simply scrumptious!

Tiramisu translates from Italian as ‘pick me up’ and this traditional dessert certainly does that. The lovely flavours of coffee, amaretto, chocolate and cream combine to make the most delicious and indulgent treat.

We had a go at creating this amazing dessert from Gino d’Acampo’s quick tiramisu recipe.

3 cups of strong black coffee cooled

3 tbsp caster sugar

6 tbsp Amaretto liqueur

2 eggs, separated

250g mascarpone cheese

250ml whipped cream

cocoa powder, to dust

1 packet of Savoiardi (sponge lady finger biscuits)

Get making!

First of all, pop the kettle on and make three small cups of strong coffee – I used Nescafe Alta Rica and this gave a delicious strong flavour without overpowering the whole thing. Put all three cups of coffee into a bowl big enough for you to dip the sponge fingers in later. Set this aside to cool down.

Whip together the whipping cream and set this aside for a bit later.

Mix together the cream, mascarpone, yolks and sugar

Next up, separate the yolks and whites of two eggs. Pop each part in bowls big enough to use an electric mixer in. Measure out 3 tablespoons of caster sugar and add it to the egg yolks. Give this a good mix for around 3 minutes until the mixture goes pale and thickens.

Add in the mascarpone cheese and carry on mixing until combined. Now, add in your whipped cream and gently fold this in until the mixture is smooth.

Now, back to the egg whites – whisk the whites up until they thicken and can form small stiff peaks. Fold the whites into the rest of the mixture gently so as not to lose the volume.

For an added boost of flavour, add 3 tablespoons of amaretto into the now cooled coffee and three tablespoons into the creamy mixture.

 It’s now time to put the delicious dessert together. I found that the mixture created enough to make five small glass dishes (Gu-pudding sized) and a regular rectangle plastic storage container. You could use any glass dishes you have or even clear storage containers.

Dip each biscuit into the coffee mixture for around 2-3 seconds, so it absorbs the liquid but before it goes mushy. Place the biscuit into the bottom of the jar. For smaller jars break the biscuit in half and push it to cover the bottom. Add a scoop of the cream mixture over the base until it’s completely covered. Repeat the same process as before for the biscuits. Then add another layer of the cream mixture. For the finishing touch dust the tops with cocoa powder.

The next step is hard… you have to pop them all in the fridge for a couple of hours to firm up. So, put the spoon down and hang tight until they’re set.

After that grab a spoon, some friends and indulge in this delicious Italian favourite.
